Muffin Batter
- 2 cups gluten-free flour blend
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ cup sugar
- ½ cup brown sugar
- 2 large eggs
- 1 cup unsweetened applesauce
- ¼ cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup diced apples
Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
In a large bowl, whisk together the gluten-free flour, baking powder, baking soda, salt, and ground cinnamon.
In another bowl, whisk together the sugar, brown sugar, eggs, applesauce, vegetable oil, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the diced apples.
Divide the batter evenly among the muffin cups, filling each about ⅔ full.
Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
