Instructions
1. Heat the oil in a large pot over medium heat. Add the goat meat and brown on all sides.
2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
3. Stir in the carrots, potatoes, and diced tomatoes.
4. Pour in the beef broth and bring to a boil. Reduce the heat and let it simmer for about 1 hour and 30 minutes, or until the meat is tender.
5. Season with salt, black pepper, thyme, and paprika. Stir well and let it cook for another 10 minutes.
6. Serve hot and enjoy!
