  • 1 can Garbanzo beans drained and rinsed
  • 1 cup Cherry tomatoes halved
  • 1 cup Cucumber diced
  • ½ cup Red onion finely chopped
  • ½ cup Feta cheese crumbled
  • ¼ cup Olive oil
  • 2 tablespoon Red wine vinegar
  • 1 teaspoon Dried oregano
  • to taste Salt and pepper

Instructions 

  1. In a large mixing bowl, combine the garbanzo beans, cherry tomatoes, cucumber, red onion, and feta cheese.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, and dried oregano. Season with salt and pepper to taste.
  3. Pour the dressing over the salad and toss to combine. Serve immediately or refrigerate for later.
