Instructions
Heat olive oil in a large pot over medium heat.
Add beef and brown on all sides. Remove and set aside.
In the same pot, add onion and garlic. Cook until softened.
Pour in red wine to deglaze the pot, scraping up any browned bits.
Return beef to the pot. Add beef broth, diced tomatoes, oregano, thyme, and bay leaves.
Bring to a boil, then reduce heat and simmer for 2 hours.
Season with salt and pepper to taste. Stir in olives and parsley before serving.
