Ingredients 

Main Ingredients

  • 2 lbs Beef Stew Meat cut into chunks
  • 2 tablespoon Olive Oil
  • 1 Onion chopped
  • 3 cloves Garlic minced
  • 1 cup Red Wine
  • 2 cups Beef Broth
  • 1 can Diced Tomatoes
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Thyme
  • 2 Bay Leaves
  • to taste Salt and Pepper
  • 1 cup Kalamata Olives pitted
  • 2 tablespoon Fresh Parsley chopped

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef and brown on all sides. Remove and set aside.
  3. In the same pot, add onion and garlic. Cook until softened.
  4. Pour in red wine to deglaze the pot, scraping up any browned bits.
  5. Return beef to the pot. Add beef broth, diced tomatoes, oregano, thyme, and bay leaves.
  6. Bring to a boil, then reduce heat and simmer for 2 hours.
  7. Season with salt and pepper to taste. Stir in olives and parsley before serving.
