Main Ingredients
- 6 medium potatoes peeled and quartered
- ¼ cup olive oil
- 3 cloves garlic minced
- 1 tablespoon lemon juice freshly squeezed
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper freshly ground
- 1 cup chicken broth
Preheat your oven to 400°F (200°C).
In a mixing bowl, combine olive oil, garlic, lemon juice, oregano, salt, and pepper.
Toss the potatoes in the mixture until well coated.
Place the potatoes in a baking dish and pour the chicken broth over them.
Bake for 45 minutes, or until the potatoes are golden and tender.
