Ingredients 

Main Ingredients

  • 12 pieces Corn Tortillas
  • 2 cups Cooked Chicken, shredded
  • 2 cups Monterey Jack Cheese, shredded
  • 1 cup Sour Cream

Green Sauce

  • 1 pound Tomatillos, husked and rinsed
  • 2 pieces Jalapeños, stemmed and seeded
  • 1 cup Cilantro, chopped
  • 1 cup Chicken Broth
  • 1 clove Garlic
  • 1 teaspoon Salt

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Blend tomatillos, jalapeños, cilantro, chicken broth, garlic, and salt until smooth.
  3. In a baking dish, spread a thin layer of the green sauce.
  4. Fill each tortilla with shredded chicken and a bit of cheese, roll up, and place in the baking dish.
  5. Pour remaining green sauce over the enchiladas and top with remaining cheese.
  6. Bake for 20-25 minutes until cheese is melted and bubbly.
  7. Serve with sour cream on top.
