Ingredients

  • 2 pieces Chicken Breasts boneless, skinless
  • 4 pieces Flour Tortillas
  • 1 cup Cheddar Cheese shredded
  • 1 cup Monterey Jack Cheese shredded
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions 

  1. 1. Preheat grill to medium-high heat.
  2. 2. Season chicken breasts with salt and pepper.
  3. 3. Grill chicken for 5-7 minutes on each side until fully cooked.
  4. 4. Let chicken rest for a few minutes, then slice into thin strips.
  5. 5. Heat a skillet over medium heat and add a bit of olive oil.
  6. 6. Place a tortilla in the skillet, add a layer of cheese, chicken strips, and more cheese, then top with another tortilla.
  7. 7. Cook until the bottom tortilla is golden brown, then flip and cook the other side until golden and the cheese is melted.
  8. 8. Repeat with remaining tortillas and filling.
  9. 9. Slice quesadillas into wedges and serve warm.
