Ingredients

  • 2 pieces Chicken Breasts boneless, skinless
  • 4 cups Mixed Greens
  • 1 cup Cherry Tomatoes halved
  • 1 piece Cucumber sliced
  • ¼ cup Red Onion thinly sliced
  • ¼ cup Feta Cheese crumbled
  • 2 tablespoons Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. 1. Preheat the grill to medium-high heat.
  2. 2. Season the chicken breasts with salt and black pepper.
  3. 3. Grill the chicken for 5-7 minutes on each side, or until fully cooked.
  4. 4. Let the chicken rest for 5 minutes, then slice it.
  5. 5. In a large mixing bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese.
  6. 6. In a small bowl, whisk together olive oil and lemon juice.
  7. 7. Drizzle the dressing over the salad and toss to combine.
  8. 8. Top the salad with sliced grilled chicken and serve immediately.
