Ingredients 

Main Ingredients

  • 2 large eggplants
  • 1 cup marinara sauce
  • 2 cups mozzarella cheese, shredded
  • ½ cup parmesan cheese, grated
  • 1 tablespoon olive oil
  • to taste salt and pepper
  • 1 teaspoon dried basil

Instructions 

  1. 1. Preheat your grill to medium-high heat.
  2. 2. Slice the eggplants into ½-inch thick rounds. Brush both sides with olive oil and season with salt and pepper.
  3. 3. Grill the eggplant slices for about 3-4 minutes on each side until tender and grill marks appear.
  4. 4. Preheat your oven to 375°F (190°C).
  5. 5. In a baking dish, spread a thin layer of marinara sauce. Arrange a layer of grilled eggplant slices over the sauce.
  6. 6. Sprinkle a portion of the mozzarella and parmesan cheese over the eggplant. Repeat layers until all ingredients are used, finishing with cheese on top.
  7. 7. Sprinkle dried basil over the top layer of cheese.
  8. 8. Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
  9. 9. Let it cool for a few minutes before serving.
