  • 2 cups Mixed Bell Peppers, sliced
  • 1 cup Zucchini, sliced
  • 1 cup Cherry Tomatoes
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Balsamic Vinegar

Instructions 

  1. 1. Preheat the grill to medium-high heat.
  2. 2. In a mixing bowl, toss the sliced bell peppers, zucchini, and cherry tomatoes with olive oil, salt, and black pepper.
  3. 3. Place the vegetables on the grill and cook for about 5-7 minutes, turning occasionally, until they are tender and slightly charred.
  4. 4. Remove the vegetables from the grill and let them cool slightly.
  5. 5. In a serving bowl, combine the grilled vegetables and drizzle with balsamic vinegar. Toss gently to combine.
  6. 6. Serve the salad warm or at room temperature.
