  • 1 Zucchini, sliced
  • 1 Red bell pepper, sliced
  • 1 Yellow bell pepper, sliced
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 4 slices Whole grain bread
  • 4 slices Mozzarella cheese

Instructions 

  1. 1. Preheat the panini press.
  2. 2. Toss zucchini and bell peppers with olive oil, salt, and pepper.
  3. 3. Grill the veggies on the panini press for about 5 minutes.
  4. 4. Assemble the panini with grilled veggies and mozzarella cheese between two slices of bread.
  5. 5. Grill the assembled panini in the press until the bread is golden and the cheese is melted, about 5 minutes.
