Ingredients

  • 1 cup Bell Peppers, sliced
  • 1 cup Zucchini, sliced
  • 1 cup Red Onion, sliced
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 4 pieces Tortillas
  • 1 cup Hummus

Instructions 

  1. 1. Preheat the grill to medium-high heat.
  2. 2. Toss the sliced bell peppers, zucchini, and red onion with olive oil, salt, and black pepper.
  3. 3. Grill the vegetables for about 5-7 minutes, until they are tender and have grill marks.
  4. 4. Warm the tortillas on the grill for about 1 minute on each side.
  5. 5. Spread a generous amount of hummus on each tortilla.
  6. 6. Add the grilled vegetables on top of the hummus.
  7. 7. Roll up the tortillas, slice in half, and serve.
