- 1 lb Ground Beef
- 1 cup Uncooked Rice
- 1 can Diced Tomatoes (14.5 oz)
- 1 cup Shredded Cheddar Cheese
- 1 cup Beef Broth
- 1 medium Onion, chopped
- 2 cloves Garlic, minced
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
1. Preheat your oven to 350°F (175°C).
2. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
3. Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent.
4. In a mixing bowl, combine the cooked beef mixture, uncooked rice, diced tomatoes, beef broth, salt, and pepper.
5. Transfer the mixture to a baking dish and cover with foil.
6. Bake in the preheated oven for 45 minutes, or until the rice is tender.
7. Remove the foil, sprinkle the shredded cheddar cheese on top, and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
8. Let the casserole sit for a few minutes before serving. Enjoy!
