Ingredients 

Main Ingredients

  • 1 lb Ham, diced
  • 2 cups Dried white beans soaked overnight
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 2 carrots Carrots, sliced
  • 2 stalks Celery, chopped
  • 8 cups Chicken broth
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried parsley
  • 1 teaspoon Salt to taste
  • 0.5 teaspoon Black pepper to taste

Instructions 

  1. 1. In a large pot, heat a bit of oil over medium heat. Add the chopped onion, garlic, carrots, and celery. Cook until softened, about 5 minutes.
  2. 2. Add the diced ham to the pot and cook for another 5 minutes.
  3. 3. Pour in the chicken broth and add the soaked beans, dried thyme, and dried parsley. Stir to combine.
  4. 4. Bring the soup to a boil, then reduce the heat to low and let it simmer for about 2 hours, or until the beans are tender.
  5. 5. Season with salt and black pepper to taste. Serve hot.
