Ham Bone and Vegetable Soup
A hearty soup made with leftover ham bone and fresh vegetables.

Main Ingredients
- 1 Ham bone with some meat left on
- 2 cups Carrots chopped
- 2 cups Celery chopped
- 1 cup Onion chopped
- 3 cloves Garlic minced
- 1 can Diced tomatoes 14.5 oz
- 6 cups Chicken broth
- 2 cups Potatoes peeled and diced
- 1 teaspoon Thyme dried
- 1 teaspoon Black pepper ground
- to taste Salt
1. In a large pot, add the ham bone, carrots, celery, onion, garlic, diced tomatoes, and chicken broth.
2. Bring to a boil, then reduce heat and simmer for 1 hour.
3. Add the potatoes, thyme, and black pepper. Continue to simmer for another hour.
4. Remove the ham bone, let it cool, then remove any remaining meat and add it back to the soup.
5. Season with salt to taste. Serve hot.
