- 1 lb Ground Beef
- 1 cup Chopped Onion
- 1 cup Chopped Carrots
- 1 cup Chopped Celery
- 3 cups Beef Broth
- 1 can Diced Tomatoes (14.5 oz)
- 2 cups Cubed Potatoes
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
1. In a large pot, brown the ground beef over medium heat. Drain any excess fat.
2. Add the chopped onion, carrots, and celery to the pot. Cook until the vegetables are tender, about 5-7 minutes.
3. Stir in the beef broth, diced tomatoes, cubed potatoes, salt, and black pepper. Bring to a boil.
4. Reduce the heat and let the soup simmer for about 20 minutes, or until the potatoes are tender.
5. Serve hot and enjoy!
