Main Ingredients
- 2 cups Pineapple chunks fresh or canned
- 1 cup Cooked ham diced
- 1 cup Shredded coconut
- 1 cup Macadamia nuts chopped
- 1 cup Mandarin oranges drained
- ½ cup Green onions sliced
- ¼ cup Fresh cilantro chopped
- ¼ cup Lime juice freshly squeezed
- 2 tablespoon Olive oil
- 1 teaspoon Salt
- ½ teaspoon Black pepper freshly ground
In a large mixing bowl, combine pineapple chunks, diced ham, shredded coconut, chopped macadamia nuts, and mandarin oranges.
Add sliced green onions and chopped cilantro to the bowl.
In a small bowl, whisk together lime juice, olive oil, salt, and black pepper.
Pour the dressing over the salad and toss gently to combine.
Serve immediately or chill in the refrigerator for 30 minutes before serving.
