Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 1 Onion chopped
  • 2 Carrots chopped
  • 2 stalks Celery chopped
  • 3 cloves Garlic minced
  • 1 can Diced Tomatoes 400g can
  • 6 cups Vegetable Broth
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste
  • 2 tablespoon Olive Oil

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add onions, carrots, and celery. Cook until softened, about 5 minutes.
  3. 3. Stir in garlic, cumin, and paprika. Cook for another minute.
  4. 4. Add lentils, diced tomatoes, and vegetable broth. Bring to a boil.
  5. 5. Reduce heat and simmer for 30-35 minutes, until lentils are tender.
  6. 6. Season with salt and pepper to taste. Serve hot.
