Ingredients

  • 1 cup Lentils rinsed
  • 1 tablespoon Olive Oil
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 2 stalks Celery chopped
  • 4 cups Vegetable Broth
  • 1 teaspoon Thyme dried
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onions, garlic, carrots, and celery. Cook until softened.
  3. Add lentils, vegetable broth, thyme, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for 30-35 minutes, until lentils are tender.
  5. Adjust seasoning if needed and serve hot.
