Main Ingredients
- 1 cup Lentils rinsed
- 1 tablespoon Olive Oil
- 1 Onion chopped
- 2 cloves Garlic minced
- 2 stalks Celery chopped
- 4 cups Vegetable Broth
- 1 teaspoon Thyme dried
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
Heat olive oil in a large pot over medium heat.
Add chopped onions, garlic, carrots, and celery. Cook until softened.
Add lentils, vegetable broth, thyme, salt, and pepper. Bring to a boil.
Reduce heat and simmer for 30-35 minutes, until lentils are tender.
Adjust seasoning if needed and serve hot.
