Hearty Vegetable Stew Recipe

Main Ingredients
- 2 tablespoon olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 cups carrots, sliced
- 2 cups potatoes, diced
- 1 cup celery, sliced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- to taste salt and pepper
- 1. Heat the olive oil in a large pot over medium heat. 
- 2. Add the chopped onion and garlic, and sauté until softened. 
- 3. Add the carrots, potatoes, and celery. Cook for about 5 minutes. 
- 4. Pour in the vegetable broth and diced tomatoes. Stir well. 
- 5. Add the dried thyme and rosemary. Season with salt and pepper to taste. 
- 6. Bring to a boil, then reduce heat and let it simmer for about 30 minutes, or until the vegetables are tender. 
- 7. Serve hot and enjoy!
