Main Ingredients
- 2 cups Heavy Cream
- 1 cup Whole Milk
- ½ cup Honey
- 2 tablespoon Dried Lavender
- 5 large Egg Yolks
- 1 teaspoon Vanilla Extract
1. In a saucepan, combine the heavy cream, whole milk, honey, and dried lavender. Heat over medium heat until it starts to simmer. Remove from heat and let it steep for 15 minutes.
2. In a mixing bowl, whisk the egg yolks until they become pale and thick.
3. Slowly pour the warm cream mixture into the egg yolks, whisking constantly to prevent curdling.
4. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon.
5. Strain the mixture through a fine-mesh sieve into a clean bowl. Stir in the vanilla extract.
6. Chill the mixture in the refrigerator for at least 4 hours or overnight.
7. Churn the chilled mixture in an ice cream maker according to the manufacturer's instructions.
8. Transfer the ice cream to a container and freeze until firm, about 2 hours.
