Ingredients 

Main Ingredients

  • 1 cup dried black-eyed peas soaked overnight
  • 4 slices bacon chopped
  • 1 onion chopped
  • 1 green bell pepper chopped
  • 2 cloves garlic minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon thyme dried

Instructions 

  1. 1. In a large pot, cook the bacon over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the pot.
  2. 2. Add the onion, green bell pepper, and garlic to the pot. Cook until softened, about 5 minutes.
  3. 3. Add the soaked black-eyed peas, rice, chicken broth, salt, black pepper, and thyme to the pot. Stir well.
  4. 4. Bring to a boil, then reduce heat to low. Cover and simmer for 30-35 minutes, or until the rice and peas are tender.
  5. 5. Stir in the cooked bacon and serve hot.
