Ingredients 

Main Ingredients

  • 1 cup long-grain white rice
  • 4 cups water divided
  • 1 stick cinnamon or 1 teaspoon ground cinnamon
  • 1 cup milk
  • ½ cup sugar or to taste
  • 1 teaspoon vanilla extract

Instructions 

  1. Rinse the rice under cold water until the water runs clear.
  2. In a blender, combine the rice, 2 cups of water, and the cinnamon stick. Blend until the rice and cinnamon are roughly ground.
  3. Transfer the mixture to a large bowl and add the remaining 2 cups of water. Let it soak for at least 4 hours or overnight.
  4. Strain the rice mixture through a fine mesh strainer into a pitcher. Discard the rice solids.
  5. Stir in the milk, sugar, and vanilla extract. Taste and adjust the sweetness if needed.
  6. Chill in the refrigerator for at least 1 hour before serving. Serve over ice and enjoy!
