Ingredients

  • 4 Eggs
  • 4 Corn Tortillas
  • 1 cup Tomato Sauce
  • 1 Onion, chopped
  • 1 Bell Pepper, chopped
  • 1 clove Garlic, minced
  • 1 tablespoon Olive Oil
  • to taste Salt and Pepper
  • 1 Avocado, sliced (optional)
  • 1 Cilantro, chopped (optional)

Instructions 

  1. 1. Heat the olive oil in a skillet over medium heat. Add the chopped onion, bell pepper, and garlic. Cook until softened.
  2. 2. Pour in the tomato sauce and let it simmer for about 5 minutes. Season with salt and pepper to taste.
  3. 3. In another skillet, heat the corn tortillas until they are warm and slightly crispy.
  4. 4. In the same skillet, cook the eggs to your liking (sunny side up is traditional).
  5. 5. To assemble, place the tortillas on plates, top with the tomato sauce mixture, and then place the eggs on top. Garnish with avocado slices and cilantro if desired.
