Ingredients 

Main Ingredients

  • 1 can chickpeas drained and rinsed
  • ¼ cup fresh lemon juice 1 large lemon
  • ¼ cup tahini well-stirred
  • 1 small garlic clove minced
  • 2 tablespoons extra-virgin olive oil plus more for serving
  • ½ teaspoon ground cumin
  • Salt to taste
  • 2 to 3 tablespoons water
  • ground paprika for serving
  • Fresh parsley leaves chopped, for serving
  • Assorted veggies and pita bread for serving

Instructions 

  1. Combine tahini and lemon juice in a food processor. Process for 1 minute.
  2. Add the olive oil, minced garlic, cumin, and a pinch of salt to the whipped tahini and lemon juice. Process for 30 seconds.
  3. Add half of the chickpeas to the food processor and process for 1 minute.
  4. Add the remaining chickpeas and process until thick and smooth.
  5. Slowly add 2 to 3 tablespoons of water until you reach the perfect consistency.
  6. Taste and adjust seasonings.
  7. Serve with a drizzle of olive oil, dash of paprika, and chopped parsley. Enjoy with veggies and pita bread.
