Ingredients

  • 2 tablespoons butter
  • 1 large onion, chopped
  • 1 pound mushrooms, sliced
  • 2 teaspoons dried dill weed
  • 1 tablespoon paprika
  • 1 tablespoon soy sauce
  • 2 cups chicken broth
  • 1 cup milk
  • 3 tablespoons all-purpose flour
  • 1 teaspoon salt
  • Ground black pepper to taste
  • 2 teaspoons lemon juice
  • ¼ cup chopped fresh parsley
  • ½ cup sour cream

Instructions 

  1. Melt the butter in a large pot over medium heat. Add the onions and cook until soft.
  2. Stir in the mushrooms and cook for about 5 minutes.
  3. Add the dill, paprika, soy sauce, and chicken broth. Reduce heat to low, cover, and simmer for 15 minutes.
  4. In a separate bowl, whisk the milk and flour together. Pour into the soup and stir well.
  5. Add the salt, pepper, lemon juice, and parsley. Simmer for another 15 minutes.
  6. Finally, stir in the sour cream and heat through, but do not boil. Serve hot.
