Ingredients 

Main Ingredients

  • 1 lb Chicken Breast cut into bite-sized pieces
  • 4 cups Chicken Broth
  • 1 cup Carrots sliced
  • 1 cup Celery sliced
  • 1 cup Onion diced
  • 2 cloves Garlic minced
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Parsley

Instructions 

  1. 1. Turn on the Instant Pot and select the 'Sauté' function.
  2. 2. Add a bit of oil and sauté the onions, carrots, and celery until softened.
  3. 3. Add the garlic and sauté for another minute.
  4. 4. Add the chicken, chicken broth, salt, pepper, thyme, and parsley.
  5. 5. Close the lid and set the Instant Pot to 'Manual' for 10 minutes.
  6. 6. Once the cooking time is complete, let the pressure release naturally for 10 minutes, then do a quick release.
  7. 7. Open the lid, stir the soup, and adjust seasoning if needed.
