Ingredients 

Main Ingredients

  • 2 pounds potatoes peeled and cubed
  • 1 cup mayonnaise
  • 2 tablespoons mustard
  • 1 cup celery chopped
  • 1 cup red onion chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons vinegar

Instructions 

  1. 1. Place the cubed potatoes in the Instant Pot and add enough water to cover them.
  2. 2. Close the lid, set the valve to sealing, and cook on Manual high pressure for 4 minutes.
  3. 3. Quick release the pressure and drain the potatoes. Let them cool.
  4. 4. In a mixing bowl, combine mayonnaise, mustard, celery, red onion, salt, pepper, and vinegar.
  5. 5. Add the cooled potatoes to the bowl and mix until well combined.
  6. 6. Chill in the refrigerator for at least an hour before serving.
