- 4 links Italian sausage mild or hot
- 2 large bell peppers sliced
- 1 large onion sliced
- 2 cloves garlic minced
- 2 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon salt to taste
- 0.5 teaspoon black pepper to taste
1. Heat olive oil in a large skillet over medium heat.
2. Add the sausages and cook until browned on all sides, about 7-10 minutes. Remove and set aside.
3. In the same skillet, add the bell peppers, onion, and garlic. Cook until softened, about 5-7 minutes.
4. Slice the sausages into 1-inch pieces and return to the skillet. Add oregano, salt, and black pepper. Stir to combine.
5. Cover and simmer for 15 minutes, stirring occasionally, until the sausages are cooked through.
6. Serve hot, optionally with crusty bread or over pasta.
