Meatballs
- 1 lb ground beef
- ½ cup breadcrumbs
- ¼ cup grated Parmesan cheese
- 1 egg beaten
- 2 cloves garlic minced
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Soup
- 1 tablespoon olive oil
- 1 onion chopped
- 2 cloves garlic minced
- 8 cups chicken broth
- 1 cup small pasta like acini di pepe
- 6 oz baby spinach chopped
- to taste salt and pepper
1. In a bowl, mix ground beef, breadcrumbs, Parmesan, egg, garlic, salt, and pepper. Form into small meatballs.
2. Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until soft.
3. Add chicken broth and bring to a boil. Add meatballs and pasta, simmer until cooked through.
4. Stir in spinach and cook until wilted. Season with salt and pepper to taste.
