Ingredients 

Meatballs

  • 1 lb ground beef
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 egg beaten
  • 2 cloves garlic minced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Soup

  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 8 cups chicken broth
  • 1 cup small pasta like acini di pepe
  • 6 oz baby spinach chopped
  • to taste salt and pepper

Instructions 

  1. 1. In a bowl, mix ground beef, breadcrumbs, Parmesan, egg, garlic, salt, and pepper. Form into small meatballs.
  2. 2. Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until soft.
  3. 3. Add chicken broth and bring to a boil. Add meatballs and pasta, simmer until cooked through.
  4. 4. Stir in spinach and cook until wilted. Season with salt and pepper to taste.
