Ingredients

  • 4 pieces Chicken Thighs bone-in, skin-on
  • 2 tablespoon Jerk Seasoning
  • 1 tablespoon Olive Oil
  • 2 cloves Garlic minced
  • 1 piece Scotch Bonnet Pepper seeded and chopped
  • 1 teaspoon Thyme dried
  • 1 teaspoon Allspice ground
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper ground

Instructions 

  1. 1. In a blender, combine jerk seasoning, olive oil, garlic, Scotch Bonnet pepper, thyme, allspice, salt, and black pepper. Blend until smooth.
  2. 2. Rub the mixture over the chicken thighs, ensuring they are well coated. Let marinate for at least 2 hours, preferably overnight.
  3. 3. Preheat the grill to medium-high heat. Grill the chicken for about 20 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (74°C).
  4. 4. Serve hot with your choice of sides.
