  • 4 cups Kale, chopped
  • 3 medium Beets, roasted and sliced
  • ¼ cup Olive oil
  • 2 tablespoon Balsamic vinegar
  • ½ cup Goat cheese, crumbled
  • ¼ cup Walnuts, toasted

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Wrap beets in foil and roast for 45 minutes or until tender. Let cool, then peel and slice.
  3. In a large bowl, combine kale, olive oil, and balsamic vinegar. Toss to coat.
  4. Add roasted beets, goat cheese, and walnuts. Toss gently to combine.
  5. Serve immediately or refrigerate for later.
