Kale and Roasted Beet Salad
A refreshing and nutritious salad with kale and roasted beets.

Main Ingredients
- 4 cups Kale, chopped
- 3 medium Beets, roasted and sliced
- ¼ cup Olive oil
- 2 tablespoon Balsamic vinegar
- ½ cup Goat cheese, crumbled
- ¼ cup Walnuts, toasted
Preheat oven to 400°F (200°C).
Wrap beets in foil and roast for 45 minutes or until tender. Let cool, then peel and slice.
In a large bowl, combine kale, olive oil, and balsamic vinegar. Toss to coat.
Add roasted beets, goat cheese, and walnuts. Toss gently to combine.
Serve immediately or refrigerate for later.
