  • 2 cups Kale chopped
  • 1 large Sweet Potato peeled and diced
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced sweet potato with olive oil, salt, and pepper. Spread on a baking sheet.
  3. Roast for 25-30 minutes until tender and slightly crispy.
  4. In a large bowl, massage the chopped kale with a bit of olive oil and salt until it softens.
  5. Combine the roasted sweet potatoes with the kale. Serve warm.
