Kale Sweet Potato Soup Recipe
A hearty and healthy soup made with kale and sweet potatoes.

Main Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 sweet potatoes, peeled and diced
- 4 cups vegetable broth
- 1 bunch kale, chopped
- 1 teaspoon salt
- 0.5 teaspoon black pepper
Heat olive oil in a large pot over medium heat.
Add chopped onion and minced garlic, cook until softened.
Add diced sweet potatoes and vegetable broth. Bring to a boil.
Reduce heat and simmer until sweet potatoes are tender, about 20 minutes.
Add chopped kale and cook for another 5 minutes.
Blend the soup until smooth using a blender.
Season with salt and black pepper to taste.
