Ingredients 

Pesto

  • 2 cups Kale leaves stems removed
  • ½ cup Walnuts toasted
  • ½ cup Parmesan cheese grated
  • 2 cloves Garlic
  • ½ cup Olive oil
  • 1 tablespoon Lemon juice freshly squeezed
  • to taste Salt and pepper

Pasta

  • 12 oz Pasta your choice

Instructions 

  1. 1. Cook the pasta according to package instructions. Drain and set aside.
  2. 2. In a blender or food processor, combine kale, walnuts, Parmesan, garlic, and lemon juice. Pulse until finely chopped.
  3. 3. With the machine running, slowly add olive oil until the mixture is smooth. Season with salt and pepper to taste.
  4. 4. Toss the cooked pasta with the kale walnut pesto. Serve immediately.
