A traditional Filipino oxtail stew with a rich peanut sauce.

Main Ingredients
- 2 lbs Oxtail
- 1 cup Peanut butter
- 1 bunch Bok choy
- 1 piece Eggplant sliced
- 1 piece Banana heart sliced
- 1 tablespoon Annatto powder
- 1 piece Onion chopped
- 4 cloves Garlic minced
- 6 cups Water
- to taste Salt
- to taste Pepper
1. In a large pot, boil the oxtail until tender, about 1.5 to 2 hours.
2. In a separate pan, sauté garlic and onion until fragrant.
3. Add the annatto powder and peanut butter to the sautéed garlic and onion. Mix well.
4. Pour the mixture into the pot with the oxtail. Stir to combine.
5. Add the eggplant, banana heart, and bok choy. Cook until vegetables are tender.
6. Season with salt and pepper to taste. Serve hot with rice.
