Lamb Shank Tagine Recipe

Main Ingredients
- 4 lamb shanks
- 2 tablespoon olive oil
- 2 onions, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 1 cup chicken broth
- 1 cup diced tomatoes
- 1 cup dried apricots, chopped
- 1 cup pitted green olives
- 1 tablespoon honey
- to taste salt and pepper
- ¼ cup fresh cilantro, chopped for garnish
1. Heat olive oil in a tagine or Dutch oven over medium heat.
2. Brown the lamb shanks on all sides, then remove and set aside.
3. In the same pot, add onions and garlic, and cook until softened.
4. Stir in the spices and cook for another minute.
5. Add the chicken broth, tomatoes, apricots, olives, and honey. Stir well.
6. Return the lamb shanks to the pot, cover, and simmer for about 2 hours or until the meat is tender.
7. Season with salt and pepper to taste. Garnish with fresh cilantro before serving.
