Lemon Berry Tart

Ingredients 

Crust

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter cold, cut into cubes
  • ¼ cup sugar
  • 1 egg yolk
  • 1 tablespoon cold water

Filling

  • 1 cup sugar
  • 3 eggs
  • ½ cup lemon juice freshly squeezed
  • 1 tablespoon lemon zest
  • ½ cup heavy cream

Topping

  • 1 cup mixed berries fresh

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine flour and sugar for the crust. Add cold butter and mix until crumbly. Add egg yolk and cold water, mix until dough forms. Press into tart pan and bake for 15 minutes.
  3. In another bowl, whisk together sugar, eggs, lemon juice, lemon zest, and heavy cream for the filling. Pour into baked crust and bake for another 15 minutes.
  4. Let the tart cool, then top with fresh berries. Serve chilled.
