Main Ingredients
- 1.5 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 0.5 teaspoon salt
- 1 cup blueberries fresh or frozen
- 2 units large eggs
- 0.5 cup milk
- 0.5 cup vegetable oil
- 1 tablespoon lemon zest from 1 lemon
- 1 teaspoon vanilla extract
Preheat your oven to 350°F (175°C). Grease a loaf pan.
In a bowl, whisk together flour, sugar, baking powder, and salt.
In another bowl, mix eggs, milk, oil, lemon zest, and vanilla extract.
Combine wet and dry ingredients until just mixed. Fold in blueberries.
Pour batter into the loaf pan. Bake for 60 minutes or until a toothpick comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
