Crust
- 1.5 cups graham cracker crumbs
- ¼ cup sugar
- ½ cup butter, melted
Filling
- 16 oz cream cheese, softened
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon lemon zest
- 1 cup blueberries
Preheat oven to 325°F (163°C).
In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of a baking pan.
In another bowl, beat cream cheese and sugar until smooth. Add eggs, vanilla extract, and lemon zest. Mix until combined.
Gently fold in blueberries. Pour mixture over the crust.
Bake for 45 minutes or until the center is set. Let cool before cutting into bars.
