Ingredients 

Scones

  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 tablespoon lemon zest from 1 lemon
  • ½ cup unsalted butter cold, cut into small cubes
  • 1 cup fresh blueberries
  • 1 large egg
  • ½ cup heavy cream
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together flour, sugar, baking powder, salt, and lemon zest.
  3. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Gently fold in the blueberries.
  5. In a small bowl, whisk together the egg, heavy cream, and vanilla extract. Pour over the flour mixture and stir until just combined.
  6. Turn the dough out onto a lightly floured surface and knead gently. Pat into a circle about 1 inch thick. Cut into 8 wedges and place on the prepared baking sheet.
  7. Bake for 20 minutes or until golden brown. Let cool on a wire rack.
