Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 6 cups chicken broth
  • 1 cup orzo pasta
  • 2 cups cooked chicken, shredded
  • 1 lemon, juiced
  • to taste salt and pepper
  • 2 tablespoons fresh parsley, chopped

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the diced onion, garlic, carrot, and celery. Cook until the vegetables are tender, about 5-7 minutes.
  3. 3. Pour in the chicken broth and bring to a boil.
  4. 4. Add the orzo pasta and cook until al dente, about 8-10 minutes.
  5. 5. Stir in the shredded chicken and lemon juice. Season with salt and pepper to taste.
  6. 6. Simmer for another 5 minutes to heat through.
  7. 7. Garnish with fresh parsley before serving.
