Instructions
1. Heat the olive oil in a large pot over medium heat.
2. Add the diced onion, garlic, carrot, and celery. Cook until the vegetables are tender, about 5-7 minutes.
3. Pour in the chicken broth and bring to a boil.
4. Add the orzo pasta and cook until al dente, about 8-10 minutes.
5. Stir in the shredded chicken and lemon juice. Season with salt and pepper to taste.
6. Simmer for another 5 minutes to heat through.
7. Garnish with fresh parsley before serving.
