Ingredients 

Crust

  • 1 cup flour
  • ½ cup shredded coconut
  • ¼ cup sugar
  • ½ cup butter, melted

Filling

  • 1 cup sugar
  • 2 tablespoon flour
  • 3 eggs
  • ½ cup lemon juice
  • 1 teaspoon lemon zest

Instructions 

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, shredded coconut, sugar, and melted butter. Press the mixture into the bottom of a greased baking dish.
  3. Bake the crust for 10-12 minutes or until lightly golden.
  4. In another bowl, whisk together sugar and flour. Add eggs, lemon juice, and lemon zest. Mix until smooth.
  5. Pour the lemon mixture over the baked crust. Bake for an additional 15 minutes or until the filling is set.
  6. Let cool completely before cutting into bars.
