  • 1 cup Sugar
  • 4 pcs Eggs large, beaten
  • ½ cup Butter unsalted, cut into pieces

Instructions 

  1. In a saucepan, combine lemon juice, zest, sugar, and eggs. Whisk until smooth.
  2. Place the saucepan over medium heat. Add butter and cook, stirring constantly, until the mixture thickens.
  3. Remove from heat and strain through a fine mesh strainer into a bowl.
  4. Let cool, then refrigerate until set. Enjoy!
