  • 8 chicken thighs bone-in, skin-on
  • 2 tablespoon olive oil
  • 4 cloves garlic minced
  • 1 lemon juiced and zested
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon fresh parsley chopped, for garnish

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Season chicken thighs with salt and pepper. Place them skin-side down in the skillet and cook until the skin is golden brown, about 5-7 minutes.
  4. Flip the chicken thighs and add minced garlic. Cook for another 2 minutes.
  5. Add lemon juice and zest to the skillet. Transfer the skillet to the preheated oven.
  6. Bake in the oven for 20-25 minutes, or until the chicken is cooked through.
  7. Garnish with chopped parsley before serving.
