- 8 chicken thighs bone-in, skin-on
- 2 tablespoon olive oil
- 4 cloves garlic minced
- 1 lemon juiced and zested
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon fresh parsley chopped, for garnish
Preheat your oven to 400°F (200°C).
Heat olive oil in a large skillet over medium-high heat.
Season chicken thighs with salt and pepper. Place them skin-side down in the skillet and cook until the skin is golden brown, about 5-7 minutes.
Flip the chicken thighs and add minced garlic. Cook for another 2 minutes.
Add lemon juice and zest to the skillet. Transfer the skillet to the preheated oven.
Bake in the oven for 20-25 minutes, or until the chicken is cooked through.
Garnish with chopped parsley before serving.
