Main Ingredients
- 1 lb shrimp, peeled and deveined
- 2 tablespoon olive oil
- 3 cloves garlic, minced
- 2 medium zucchini, spiralized
- 1 lemon juice and zest
- to taste salt and pepper
- 2 tablespoon fresh parsley, chopped
1. Heat olive oil in a skillet over medium heat.
2. Add minced garlic and sauté until fragrant.
3. Add shrimp and cook until pink and opaque.
4. Add spiralized zucchini, lemon juice, and zest. Toss to combine.
5. Season with salt and pepper to taste. Cook for another 2-3 minutes.
6. Garnish with fresh parsley and serve immediately.
