Ingredients 

Main Ingredients

  • 2 cups quinoa
  • 4 pieces chicken breasts boneless, skinless
  • 2 tablespoon olive oil
  • 1 teaspoon lemon zest
  • 2 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt to taste
  • 0.5 teaspoon black pepper to taste
  • 2 cups chicken broth
  • 1 cup cherry tomatoes halved
  • 1 cup spinach fresh

Instructions 

  1. 1. Rinse quinoa under cold water. In a saucepan, combine quinoa and chicken broth. Bring to a boil, then reduce to a simmer. Cover and cook for 15 minutes or until liquid is absorbed.
  2. 2. While quinoa is cooking, season chicken breasts with salt, pepper, oregano, and thyme.
  3. 3. In a skillet, heat olive oil over medium heat. Add chicken breasts and cook for 6-7 minutes on each side or until fully cooked.
  4. 4. Remove chicken from skillet and let rest for a few minutes. Slice into strips.
  5. 5. In a large bowl, combine cooked quinoa, chicken strips, lemon zest, lemon juice, cherry tomatoes, and spinach. Toss well.
  6. 6. Serve warm and enjoy!
