Lemon Herb Chicken Quinoa Recipe

Main Ingredients
- 2 cups quinoa
- 4 pieces chicken breasts boneless, skinless
- 2 tablespoon olive oil
- 1 teaspoon lemon zest
- 2 tablespoon lemon juice
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt to taste
- 0.5 teaspoon black pepper to taste
- 2 cups chicken broth
- 1 cup cherry tomatoes halved
- 1 cup spinach fresh
1. Rinse quinoa under cold water. In a saucepan, combine quinoa and chicken broth. Bring to a boil, then reduce to a simmer. Cover and cook for 15 minutes or until liquid is absorbed.
2. While quinoa is cooking, season chicken breasts with salt, pepper, oregano, and thyme.
3. In a skillet, heat olive oil over medium heat. Add chicken breasts and cook for 6-7 minutes on each side or until fully cooked.
4. Remove chicken from skillet and let rest for a few minutes. Slice into strips.
5. In a large bowl, combine cooked quinoa, chicken strips, lemon zest, lemon juice, cherry tomatoes, and spinach. Toss well.
6. Serve warm and enjoy!
