Ingredients 

Main Ingredients

  • 1 cup couscous
  • 1 cup water
  • 1 tablespoon olive oil
  • 1 lemon (zested and juiced)
  • ¼ cup chopped fresh parsley
  • ¼ cup chopped fresh mint
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. Bring water to a boil in a saucepan. Add couscous, cover, and remove from heat. Let it sit for 5 minutes.
  2. Fluff couscous with a fork. Stir in olive oil, lemon zest, lemon juice, parsley, mint, salt, and pepper.
  3. Serve warm or at room temperature.
