Main Ingredients
- 1 whole Chicken about 4 pounds
- 2 tablespoon Olive Oil
- 1 whole Lemon sliced
- 4 cloves Garlic minced
- 1 tablespoon Fresh Rosemary chopped
- 1 tablespoon Fresh Thyme chopped
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
Preheat your oven to 425°F (220°C).
Rinse the chicken and pat it dry with paper towels.
Rub the chicken with olive oil, then season with salt and pepper.
Stuff the cavity with lemon slices, garlic, rosemary, and thyme.
Place the chicken in a roasting pan and roast for about 60 minutes, or until the internal temperature reaches 165°F (74°C).
Let the chicken rest for 10 minutes before carving.
