- 1 cup unsalted butter softened
- ½ cup granulated sugar
- 2 cups all-purpose flour
- 1 tablespoon dried lavender finely chopped
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
Preheat oven to 325°F (165°C). Line a baking sheet with parchment paper.
In a mixing bowl, cream together the butter and sugar until light and fluffy.
Mix in the lemon zest, lavender, vanilla extract, and salt.
Gradually add the flour, mixing until just combined.
Roll the dough into a log and wrap in plastic wrap. Chill for 30 minutes.
Slice the dough into ¼-inch thick rounds and place on the prepared baking sheet.
Bake for 18-20 minutes, or until the edges are lightly golden. Cool on a wire rack.
